Blue Cheese, Mushroom and Gnocchi is a great combination. Especially when you add a little parsley to the mix. This recipe is one of these again that are very fast to prepare for these stressful days. This will be quite fast for 2 persons, as long as you buy the gnocchi ready from the supermarket. Making your own gnocchi is not hard. Still, it takes for most people too much time, especially when there is a convenient alternative. Plan about 10-15 minutes from start to finish, as the gnocchi just have to cook for 2 minutes. Ingredients
- 400g Gnocchi
- a bit of Olive Oil and Butter
- 1 Onion
- 250g Mushrooms
- 2 Garlic Cloves
- 100g Blue Cheese
- A small pack Parsley
Mixing Mushrooms with parsley and blue cheese is, in general, a good idea to make sauces. You could also eat fried potato wedges or potato pancakes instead of the gnocchi. It’s extra delicious when you bake it in the oven.
Instructions
- Boil the Gnocchi as the instruction tells you too. When they float on top, they should be ready!
- Meanwhile, cut the onions in cubes and slice the Mushrooms. Heat a little butter and olive oil in a frying pan and cook the vegetables on a higher heat for about 1-2 minutes. Then place a lid on the pan and turn the heat down to medium and let the vegetables get soft.
- Slice the garlic and add it in the end with the parsley to the mushrooms. Melt the cheese in the sauce and add the Gnocchi with a little bit of the water. Enjoy!
